Jesus is not, of course, talking about the natural processes of digestion and expulsion making us unclean, although it is a great analogy.
The liturgists also feed us today with the reading from Genesis - the second account of creation in which all is made good, ready for man[kind]. God makes it very clear that we are not free to use creation as we wish.
Jesus is concerned with what we do to all that God has given us - for nothing that comes into us from creation makes us unclean. God made it - it must be good. It is how we mis-use creation that makes us unclean, both individually due to our sinfulness, but also as a community, through excessive consumption and pollution of the environment.
